Christmas Jam and Shelby

Sorry about the Christmas Jam recipe that was supposed to be posted here yesterday...Hopefully, today is not too late...


Shelby in her warm, inviting, and always busy kitchen, and below is the recipe.



Christmas Jam

1 (12-ounce) pkg. fresh Cranberries
2 (10-ounce) pkg. frozen Strawberries, thawed
4 cups sugar
1 (3-ounce) pkg. liquid pectin

Position knife blade in food processor bowl; add cranberries. Cover; process until cranberries are coarsely chopped. 
Combine cranberries, strawberries, and sugar in a Dutch oven; bring to a boil and cook 1 minute, stirring occasionally.
Remove from heat; add pectin. Return to a full rolling boil; boil 1 minute, stirring constantly.
Remove from heat and skim off foam with metal spoon.
Quickly pour jam into hot sterilized jars, leaving 1/4" head space; wipe jar rims, cover at once with metal lids and screw-on bands, process in boiling water bath 5 minutes.
Yield; 7 half pints

These are the jams she makes...
Apricot, Blackberry, Blueberry, Blueberry peach, Christmas, Frog, Peach, Ginger peach, Jalapeno peach, Hot jalapeno peach, Plum, Raspberry, Strawberry, Strawberry Rhubarb, Tripleberry, and Spiced tomato.

and the jellies...
Cherry, Ghost pepper, and Grape. 

and the butters...
Apple, Honey apple, Honey blackberry, Honey blueberry peach, Honey strawberry, Honey blueberry.

and these...
Fig preserves, Orange marmalade, Mango relish, Tomato relish, and Chow-chow.

Good gosh! I had no idea! No wonder she never has any free time.


Looking out the back door of Shelby's and Jimmy's house, I love the old barn and out buildings.

Wonder if there could be an old rusted cast iron pot-bellied stove tucked away in their barn somewhere? I really need one for the playhouse...


with a bit of rearranging, the little stove could go inside the fence panels...

Recently, Poppy said to me,"Henny, you can't  put a cast iron stove in the playhouse. The rain and damp weather will make it rust". So, I had about given up on the idea until this thought hit me, "there are covers for everything else, why not make a cover from an old brown tarp". It's not like the stove will be used every day. 


So, once again I am in the market for a pot-bellied stove, a small table with two chairs (Bistro set would be perfect), and a tea kettle.  Oh, then we will need a small shelf and a few thrift store teacups and saucers. :)

Guess I had better get busy. It's time for Poppy to get home. I've had a little vacation, even though it was Poppy doing the traveling. He has been gone since Friday morning early, and I've been home alone! He went down home (Moore County) to deer hunt with his nephew. As of last night, they had not even seen a deer.  Yay!!  I pull for the deer.

  1. Oh I'm sure you will find a teapot easily, well at least you would here, and tea cups too. Keep your eyes out on Craigslist. The stove might be a bit harder, but there is nothing to stop you contacting the seller of the one you posted and making a lowball offer. You could be nice about it and say something like. 'Please let me know if you don't sell your stove and if you would be willing to take $xxx' You just never know!! Kind of nice to have the place to yourself every once in a while, isn't it ? ;-)
    Interesting to see Shelby's jams. I make a lot of the same flavours. With my cranberry ones, I cook the cranberries up first so they 'pop' and then add the rest of the fruit. I just use the powdered pectin, have never used the liquid. (Probably because the powder is cheaper! ;-)) Will have to try the jams with chopping the cranberries and see how I like that. Now you know we are all going to ask what is in the Frog jam don't you!!

    1. Thank you Karen. I almost got my nerve up and asked about the stove in the picture...like you said. That one sure is rusty! I think that's a good idea. and, I need to remember to check Craigslist every day. I will ask Shelby about the Frog jam today. :)

  2. Shelby's jams and jellies sound so good! I bet her home always smells delicious from all of her cooking and baking!

    Why don't you check with some of those home contents auction companies for pot bellied stoves? Not the fancy auction companies that are too pricey but the ones that handle the sales of the contents of a house on the property especially if the property includes barns and other out buildings. Sometimes items like that are moved out for storage and then forgotten about.

    I just love your play house Henny! I have a feeling we will be seeing that grow and change in coming years - what fun!

  5. Thanks for posting the Christmas Jam recipe. I think I'll try it at Christmas when fresh cranberries are available but I probably will not use pectin. Frog jam? Please explain.
    I made Peach/Ginger jam this week. It turned out fine except I should have cut the ginger finer. DH grated it and it was a bit 'stringy' as Ginger tends to be.

    1. I don't use any pectin in the three jams I make that have cranberries in them. They set just fine without any long boiling down/

  7. I'm with Karen, I want to know what's in that frog jam! I need some of that for my brother-in-law's Christmas present. I never know what to get for him. Frog jam would probably be just perfect!

    I love how your list of accouterments for the little playhouse keeps growing. It's going to look great and be so much fun to play around in.

  8. Henny, does Poppy ever run across antlers when he's out hunting? Every time I see them for sale in thrift shops I always think of you and wonder if you sell them in your online sales?

    1. Oh, absolutely! He can bring home lots of deer antlers from the deer processing plant. I've told him before how expensive one deer antler is, if you buy it in a pet store...I've seen them for $17.00 each, one piece. It's illegal in North Carolina to sell the deer meat. We need to check on this. Thank you!

    Thank you for showing us Shelby and all the things she puts up! Wow....that's quite a list. Does she ever ship to people who live far away? I'd love to buy some of her jams and jellies and chow chow, like my mom used to make! What kind of bread does she have sitting all over her table? It looks good too! Good luck finding your pot bellied stove! Where there's a will, there's a way!

  11. Thanks for sharing. I have made cranberry but not a combination with strawberries. Yum. I am interested in what is Frog jam? Never heard of it.

  17. Made my first batch of Christmas jam yesterday.... only 6 jars though. It jelled nicely and tastes great. I am making a second batch today but will add a small jalapeno pepper when I grind up the cranberries ( $.79 for a 12 oz bag at Aldi) for the heat lovers in my family. Fingers crossed!!

  18. It doesn't seem like a long post at all, because your writing is so personable and fun :) I can't wait to see how your playhouse comes along! Anyplace with a tea set is my kind of place. And that jam sounds very delicious. I have cranberries in my freezer -- I buy extra bags each holiday season just for situations like this!
