A pretty little ring

When I opened a new bag of cornmeal last night to start supper...I thought about mama...



It was that silver band that keeps the bag closed.  When mama opened a new bag she would say, "who wants this pretty little ring to wear"?  This was many years ago when I was small and under her feet while she was busy cooking.  Well I just loved being the one to wear that pretty little ring.  It always fit just right.  Doesn't fit so good now... 



Anyway, lots of things bring back sweet memories of mama.

I fried salmon patties for supper.  Growing up mama made salmon patties a lot and we usually had macaroni and cheese, stewed cabbage, pinto beans, and cornbread to go along with them.




A few years back I came across this recipe in an old Progressive Farmer magazine. The recipe was a little different from mama's so I tried it.  These are sooo good!  Of course, mama's were really good too!

1 lg. can salmon
10 saltine crackers, crushed
1/4 cup cornmeal
1 tsp. black pepper
1 lg. egg (I add 2 extra egg whites. Makes the 
                 patties extra crispy)
mix, and fry in oil.

While I'm over here at the stove...you know what makes a perfect spice rack?  An old bread box with the door removed...



I had looked everywhere for a shelf to fit here. Lynn just has an eye for things like this. She found it in a thrift store. Took the door off and painted it and it's perfect!

Poppy just informed me that we need to get up at 4:30 tomorrow morning.  Better start wrapping things up!! :)

  3. I love salmon patties. We had the same thing for supper. I have never heard of adding cornmeal to them. I cooked mine on the griddle tonight trying to lay off the oil. We had macaroni and cheese, pintos, instant potatoes and little green peas.

  4. Oh that takes me back! I used to fry salmon patties a lot when we were first married. We haven't had that in years! Good idea on the spice rack.

  5. Thanks for your recipe, I will try them. They look so good and I have a Cast Iron Skillet too. 4:30 yuck..but have fun whatever you are doing so early:)

  8. Hello Henny,
    My Mom made "salmon croquettes", which were probably similar, but had more of a domed shape. I'll have to ask her how she made them, and I know we had salmon patties. The only salmon we ever had was from cans, and now we get the lovely fresh salmon at the market. I actually caught several from a boat when we were in Alaska! The fishing guide helped me hold my fish when we took photos, and got the hook out so we could release them. Or I would have fallen out of the boat! They were spawning, and there were hundreds in this cove, all heading toward a stream that was tumbling down to the open water. And there was a bear, just arriving along the shore, looking for dinner after a long hibernation, and eating berries on its trek from higher elevations. The bear just marched up the rocky creek, and smacked at the salmon, and started feasting. It was about 10:30 at night, but it looked like 3pm on a misty afternoon. A wonderful memory.     You were brave to be out fishing in Alaska! I can't imagine seeing a bear along the bank! Dan and I went to Alaska in 1998 when my granddaughter Madison was born. My Son-in-law took Dan out fishing and Dan caught a 50 pound Halibut. Probably the most exciting thing that will ever happen to either of us! We will never forget that trip! My doctor prescribed me a couple of nerve pills because I was afraid to fly! :) I would love to know about the salmon croquettes. Most of the salmon we eat now is from a can! Just heard on the news that California is getting rain. So happy to hear that! Love, Henny
