Talking beans again

Frying out fat back to cook a pot of green beans.  Southern style... :)



To tell you the truth, I'm about tired of messing with green beans. It took all day yesterday to snap that 17 pounds. Of course there were other things that had to be done besides the beans. I was in and out of the kitchen all day. There were enough beans for another caner full...seven quarts and all the rest I put in a big pot with some fat back grease and put the pot on simmer...



And as Mr. Darling from the Andy Griffith show would say..."Done and done"! All we need now is cornbread, corn of the cob, fried okra, and a sliced red ripe tomato.

While the beans were cooking I stewed all the tomatoes that were getting too ripe. I can freeze these...



Poppy and I will never eat such a big pot of beans so I plan to share these with our friend Nellie. Nellie is always stopping by with some kind of food she wants us to try. Last week it was squash pie. Once she had baked a pinto bean cake and brought each of us a slice and to go with the cake, a quart of cold goat's milk. Nellie is a character. She is an older lady who lives alone in a small green mobile home about five or six miles up the highway. Nellie has goats. She has chickens, guineas, peacocks, ducks, and geese. She loves birds, birdhouses, and flowers. She loves Indian jewelry and rings, and Nellie loves dolls. One day last week Nellie stopped by with two pitiful looking naked baby dolls and asked if I would make them some clothes. Here's how the babies look now...





I can hardly wait to give them back to Nellie. 

Guess I had better get out and close the chicken house door. It is getting dark earlier these days. This morning when I walked Piper down to the pond, she stayed. Last time I checked, Piper and our lonely little muscovy duck were swimming side by side. Did my heart good.

  3. Looks like a yummy meal of green beans. I love green beans and I have canned around 50 jars. I have some that need picking but it is suppose to rain for the next two days.

    1. 50 jars! That's a lot. As of yesterday, I have 26 jars. I have more to pick too but dread messing with them. That rain made everything in the garden come to life again. Hope you are feeling better! Love you!

  4. We like Green Beans with a bit of onion and bacon and a slosh of vinegar. The dolls look real good in their new outfits! I bet Nellie will love them...she sounds like a wonderful lady:).

    1. You were probably too young to remember the old show The Twilight Zone. There was an episode something about a doll trying to kill someone...the doll would show up on the stairs during the night. I don't remember exactly, but it almost made me afraid of my dolls.

  8. I confess I do not understand this way of cooking green beans. Is it because they used to be tough? We cook them just until they are no longer squeeky, but still dark green, add a bit of salt and butter, and Yum, Wonderful fresh green beans.
    I'm glad to hear your ducks are bonding. Otherwise YOU might have had to move to the pond.

    1. I think tough is why the old folks cooked beans this way. Now everyone wants the little slim tender green beans. I still love these half runner string beans. I need to try your way. I'm sure it is much healthier.

    I know what you mean about beans. I feel bad, but I want the garden to be done! The heat and humidity wear me out.
