Fruit cake and a little video

There were several things I wanted to post this morning but maybe I'll just do a couple and save some for another time...

I made a fruit cake! Not a baked fruit cake, but an icebox fruit cake. This is the one mama used to make and it is unbelievably delicious. Tastes more like candy than cake.

Seems like I posted the recipe once before. Anyhow, you start with a new box of graham crackers.

A box of graham crackers used to be bigger, 16 ounces if I'm not mistaken. The recipe calls for a pound each of most the ingredients...
All the ingredients listed come in smaller packages now so it all works out.
Started by crushing the crackers and then cutting the marshmallows.


after switching to a larger pan, I added the other ingredients and mixed and mixed and mixed!


Poppy kept saying, "I'm telling you, all that is not going to fit back in that box!"  "But it will", I said. Guess who won. Poppy, of course. I packed and packed, even taped the corners of the box to keep them from splitting, but no good. Believe me, the leftover is not going to waste.

Here's the recipe...


Icebox Fruitcake

1 Box Graham Crackers (crushed)
1 lb. Box Marshmallows (cut)
1 lb. Pecans (cut)
1 lb. Walnuts (cut)
1 lb. Candied Cherries (cut)
1 Fresh Coconut (grated)
1 Box Dark Raisins
1 can Eagle Brand Milk

Mix, pack in cracker box lined with wax paper, enough to fold over cake. Tie box with string and place in refrigerator.

So if any good at all comes from cutting all these trees, maybe the two pear trees in our front yard will get enough light to grow a pear. Wouldn't that be something!

It sure is cold and rainy today. Downright gloomy. Here's a glance out the living room window, after our walk in the rain...

  1. That tree eating monster is noisy and intrusive, and WHY? Are they harvesting those trees or clearing for development? It will certainly bring a change to your property.

  2. Hi Henny :) Oh that video...I'm guessing they are selling the lumber? For your sake I hope they aren't planning condos or anything like that!! What an annoyance, it seems to close to you. Your fruitcake looks so easy and delicious! It's so dark out that window! It's a cold day here in the mountains, but we are actually expecting rain all day tomorrow, it's going to be an ice rink out there come sun down!

  3. Ouch! It hurts me to see trees taken out like that! Your fruitcake looks good! I've never heard of that recipe but I do have a lot of Eagle Brand Milk recipes. Have a good weekend!

  4. That fruitcake looks amazing and seems pretty simple. I may have to give that a try. I sure hope they're just cutting some trees to make it easier for the others to grow. That will also help with the risk of fires, at least that what we're told has happened and we're having such severe fires out here in the west in the summers. They quit forest management because of the backlash when they thinned the forest. Now there is too much slash. Anyway, I hope its not because someone is planning to build so close to you. That wouldn't be fun would it? I hope you have a great weekend.

  6. Aww I remember one Christmas I cam and spent some of the holiday break with you and there was a fruit cake in the refrigerator and i kept nibbling on it until it was gone. It was so yummy. I would make this one but I would probably be the only one to eat it and I surely don't need a whole fruit cake LOL. I hope you have a wonderful Christmas I love and miss you so much

  8. I make a baked fruit cake by an aunt's recipe. The farmer and I like it, but not many in the family like fruit cake. ?? What's wrong with people? lol
    I can remember when the timber in front of our house was being cut; we were afraid someone was going to build a house across from us. A couple of years ago we bought the place and the pines are growing tall. Could this be the reason the timber is being cut?

    I laughed when I read that Poppy said all that wouldn't fit back in the box!! That conversation could have been between me and Ken!!! 🙂

  11. Hi Henny- Guess it does not take long to cut down the trees...hope it is happening for a good reason- the trees don't seem to be that big in girth and are fairly young trees. A gloomy winters day there too...here to-day it is milder at 28Deg C though no rain- unfortunatly. Best Wishes. KEV. (Sydney-Australia).

  15. That icebox fruit cake is so interesting! I've never seen anything like it. I'd love to see a photo of it out of the box.

  18. Oh my, what a monstrous machine! It looks like some mythical monster on the rampage. So do you know what the people who own the land are planning on doing once the trees are all taken out? Well, there is that old saying "Don't fall in love with your neighbor's tree." You don't have any say in what happens over there. I do wish it wasn't so close to your land though and it would be nice if they left at least a little buffer between you and them----more than just that little narrow road.

    The fruitcake sounds interesting. I might try that----it does sound like candy! I sometimes make a Kentucky Whiskey Cake-------oh so good! But I am the only one here who likes fruitcake so I am condemned to eating the whole thing myself. Usually I divide it up into several small cakes for friends and a larger one for me. It takes my biggest pan to do the mixing of all the ingredients-----that's the only time I ever use that one. It's enormous--11 inches in diameter and 6 inches tall. Just sits there in the cabinet taking up space all year long for one little use.

  23. My husband and mother are two people who love fruit cake. I can't stand it. Texas has a chain of fruitcake stores that sell all year round going back to the 30's I believe. If your neighbors cut down too many more trees Melba, you're not going to be able to say you live out in the woods soon!

    1. I bet you mean the Collin Street Bakery in Corsicana. Have you ever tried their fruitcake? I'd bet money that you would like it (and I'm not a bettin' person)----it's miles ahead of any other commercial fruitcake that I have ever eaten.

  27. I think this is the same Christmas cake that my mother-in-law used to make each year, if so it's delicious.
    Thank you for sharing your mum's recipe Henny.
    The fruitcake I was brought up with was made months ahead of Christmas, with marzipan and Royal white icing, hard as a rock, it's a lost art nowadays.
    I do hope that clearing of the land doesn't mean a subdivision being built right next door to you. They are building everywhere in our little town, and now you can hardly get down the streets for traffic, and shops spring up on every corner.
    I'm not a fan.

  29. That sounds like a very interesting recipe! A month ago I would have been interested ... but now that I've been through Christmas, I'm so tired of sugar!! I threw out all the Christmas cookies left over this morning.
